How to cook
- Chicken-fried steak: dredge in seasoned flour, dip in egg and milk, dredge again, then fry in 1/2 inch of oil at 350°F, 2 to 3 minutes per side. Serve with peppered cream gravy.
- Quick sear: season and sear 1 to 2 minutes per side. They are thin, so don’t overcook.
- Cook to 145°F.
